Ingredients:

– 12 jalapeños
– 1/2 pound of ground sausage
– 1/2 cup of shredded cheese
– 1/4 cup of diced onion
– 1/4 cup of diced bell pepper
– 1/4 cup of diced tomatoes
– 1 teaspoon of minced garlic
– 1/2 teaspoon of chili powder
– 1/4 teaspoon of cumin
– Salt and pepper to taste

Instructions:

1. Preheat oven to 350 degrees.
2. Cut jalapeños in half lengthwise and remove the seeds and membranes.
3. In a large skillet, cook the sausage until it’s browned.
4. Add the onion, bell pepper, tomatoes, garlic, chili powder, cumin, salt, and pepper to the skillet and cook for an additional 5 minutes.
5. Remove from heat and stir in the cheese.
6. Fill each jalapeño half with the sausage mixture.
7. Place jalapeños on a baking sheet and bake for 15 minutes.
