A Hearty and Healthy Vegan Goulash Recipe Perfect for Cold Winter Nights

Ingredients:
– 2 tablespoons of olive oil
– 1 onion, diced
– 2 cloves of garlic, minced
– 2 carrots, diced
– 2 celery stalks, diced
– 1 red bell pepper, diced
– 1 teaspoon of paprika
– 1 teaspoon of dried oregano
– 1 teaspoon of dried thyme
– Salt and pepper to taste
– 2 cups of vegetable broth
– 1 can of diced tomatoes
– 1 can of cooked beans, drained and rinsed
– 2 cups of cooked macaroni
– 2 tablespoons of tomato paste
Instructions:
1. Heat the olive oil in a large pot over medium heat.
