Taste the Mediterranean: Delicious Chicken Gyros

Ingredients:
– 1 lb of boneless, skinless chicken breasts
– 1/4 cup of olive oil
– Juice of 1 lemon
– 2 cloves of garlic, minced
– 1 teaspoon of dried oregano
– 1 teaspoon of dried thyme
– 1 teaspoon of smoked paprika
– 1/2 teaspoon of salt
– 1/4 teaspoon of black pepper
– 4 pita breads
– 1/2 cup of plain Greek yogurt
– 1/4 cup of chopped cucumber
– 1/4 cup of chopped tomatoes
– 1/4 cup of chopped red onion
– 1/4 cup of chopped parsley
– 1/4 cup of crumbled feta cheese
Instructions:
1. In a small bowl, combine the olive oil, lemon juice, garlic, oregano, thyme, smoked paprika, salt, and pepper.
2. Place the chicken breasts in a shallow dish and pour the marinade over them. Cover and let marinate in the refrigerator for at least 1 hour.
3. Preheat the oven to 375 degrees F.
4. Place the chicken breasts on a baking sheet and bake for 25-30 minutes, or until the chicken is cooked through.
5. Heat the pita breads in the oven for 5 minutes.
6. To assemble the gyros, spread a layer of Greek yogurt on each pita bread. Top with the cooked chicken, cucumber, tomatoes, red onion, parsley, and feta cheese.
