Ingredients:

– 2 pounds of lamb, cut into cubes
– 2 large potatoes, cut into cubes
– 2 large carrots, cut into cubes
– 1 large onion, diced
– 2 cloves of garlic, minced
– 2 tablespoons of tomato paste
– 2 tablespoons of Worcestershire sauce
– 2 cups of beef broth
– 1 teaspoon of dried thyme
– 1 teaspoon of dried rosemary
– Salt and pepper to taste

Instructions:

1. Preheat the oven to 350°F.

2. In a large pot, heat a tablespoon of oil over medium heat. Add the lamb cubes and cook until browned.

3. Add the potatoes, carrots, onion, and garlic to the pot and cook for 5 minutes.

4. Add the tomato paste, Worcestershire sauce, beef broth, thyme, rosemary, and salt and pepper to the pot and stir to combine.

5. Bring the mixture to a boil, then reduce the heat and simmer for 30 minutes.

6. Transfer the stew to a large baking dish and cover with foil.

7. Bake in the preheated oven for 1 hour.

8. Serve with boiled potatoes and a slice of Irish soda bread.
